The G-81 is the fluted knife in the classic Japanese Vegetable style. It is perfect for cutting vegetables from lettuce, onions, cabbage and cucumbers. It also has a fluted edge which stops pieces of the vegetables getting stuck to the blade, this is because it collects pockets of air in the fluted area of the knife as you are cutting it which stops the vegetables from sticking.
